Nilands to open new Hamilton Island restaurant

Josh Niland “It reflects so much of what we value – bringing people together to create memories in beautiful surroundings,"

Award-winning culinary duo Josh and Julie Nilands will open a new restaurant on Hamilton Island in April.

Best-known for their three-hatted Sydney restaurant Saint Peter, the Niland’s will bring their world-renowned flair to the island, with the eatery at Hamilton’s new luxury boutique hotel, also opening next month.

The new property, The Sundays, is a boutique 59-room hotel designed to redefine luxury and relaxation.

The Nilands will introduce an entirely new dining experience to Hamilton Island, blending their culinary vision with a warm and friendly approach. The restaurant will celebrate togetherness and the joy of sharing meals in an ocean setting.

Josh Niland said he and Julie fell in love with the entire vision behind The Sundays.

“It reflects so much of what we value – bringing people together to create memories in beautiful surroundings,” he said.

“We can’t wait to introduce a dining experience that feels connected to the island and its incredible natural environment.”

The menu will feature Josh’s signature whole-fish ethos while also incorporating a selection of land-based proteins and local ingredients.

Acting CEO of Hamilton Island, Nick Dowling, said Josh and Julie’s approach to food is nothing short of exceptional.

“Their creativity and expertise will offer our guests an experience that is uniquely connected to the island’s natural setting,” he said.

“We are delighted to welcome Josh and Julie’s family into ours as we embark on an exciting chapter for Hamilton island. The Sundays marks the beginning of a bold food and beverage strategy, ensuring the island remains a must-visit destination for travellers seeking world-class dining and unforgettable experiences.”
